This simple sauce can be quickly made and use as a marinade on chicken, lamb or pork.

The recipe for the sauce be varied according to your taste (try a little of the sauce before applying to the meat), and depending on the varieties of hot sauce, and ketchup etc., that you use.

The ingredients are (as noted, amounts are approximate and can be varied): Here are the steps to prepare the sauce:
  1. Mix the honey ketchup.

  2. Mix in the hot sauce. If you are using a very spicy sauce, you might consider adding less.

  3. Finally, mix in the soy sauce and mustard. Because either of these ingredients can easily overwhelm all the other flavors, it is best to add a little of each very gradually, and have a taste before adding up to the full/desired amount.

  4. Cut or score the surface of meat or poultry, and apply the sauce as a marinade. If possible, you should marinate the meat overnight in the fridge before cooking the meat the following day. Please note, the sauce tends to become thicker and stickier during the cooking process.
